Meet Till’s Tastes

One of our favorite food vendors, Till’s Tastes, creates tame, sassy and fierce rubs to season dishes. We asked Till’s owner and founder, Till Grob, some questions about his business to get a preview of what he’s bringing to the West Lake Market this summer. 

 

 

Q: How long has your business been around and how did it start?

 

A: About fifteen years ago I came up with my own spice rub after reading a recipe in a cooking magazine. I started using my rub at cookouts and dinner parties, which everybody loved, and friends and family encouraged me to sell it. My rub became an all-purpose spice for anything from scrambled eggs to roasted pumpkin seeds and potatoes.

 

Finally, about two years ago, the time and money were right, so I took the plunge and created Till’s Tastes!

 

 

Q: What are you most excited to share with West Lake Market shoppers?

 

A: Our line consists of three all-purpose rubs. Rather than offering a pork rub, steak rub, salmon rub etc., we focus on one flavor profile offered in three different heat levels. Till’s Rub is so versatile that our fans put it on seafood, dips, veggies, and of course, meat and poultry.

 

Tame is the mildest of the three, made with a mix of different paprikas, herbs, spices, salt and sugar, and just a hint of smoke. It’s the perfect punch of flavor without the heat.

 

Sassy is our original combination of chiles, herbs, and spices mixed with salt and sugar. It’s perfect if you like bold flavors with just the right balance of medium heat and sweetness.

 

Fierce has the same fantastic flavors of the Sassy rub but with that extra kick of habanero chiles. It’s perfect to make you sweat!

 

 

Q: What advice do you have for others wanting to start their own business in Chicago?

 

A: Be true to your values. Focus on being the best at what you do. Ask for and accept help, because you can’t do it all by yourself.

 

Q: When you’re not working, where can we find you?

 

A: I like developing new recipes in my kitchen or tending to my garden. In the summer you will find me on my motorcycle cruising the countryside or tinkering in my garage working on all kinds of projects like learning how to forge or restoring old furniture.

 

 

Q: What has been the most rewarding part of your business?

 

A: Our vision is for every home cook to be excited, fearless, and successful in the kitchen.

 

Getting feedback from customers and letting us know that Till’s Rub helped them pull off a successful meal or cookout is fantastic. Hearing that our customers are getting back into the kitchen and are having fun cooking makes my day!
